You can change the image but you need to "trick" XSite Pro so that it will leave the new image alone.
XSite Pro's Video Wizard generates source that looks like this:

Note the text highlighted in red. The Video Wizard creates a .jpg image the same size (dimensions) as your video and gives it the same name with a .jpg extension. To replace this image, use an image the same size (dimensions) and give it the EXACT same name. Use Resource Manager to import this image into your XSP images folder. Since it has the same name, XSite Pro will leave it alone.
It is unlikely that XSite Pro will republish the new image, so you will also need to use an FTP client like FileZilla to upload the "new" image to your website "images" folder. You can also just skip the import into Resource Manager and upload the new image with the same name to your images folder. If you skip the import into Resource Manager, there's no guarantee that XSite Pro won't overwrite this in the future.
