Sitemaps are a great way for search engines to find all your web pages.
If a search engine does not find a web page, then it will not appear on the search results (not a bad thing for thank-you pages, and policy pages, etc)
Sitemaps also help human web site visitors to go to a specific section they are looking for, if they know where know where they are going.

The other advantage of sitemaps is that Google and all, calculate the importance of a web page in part by the proximity to the home page.
IE, how many links do you have to use to get from the home page to the end page.
The Sitemap helps shorten this chain for deeply rooted web pages on your site.
In short there are loads of good reasons to have a site map, and not many reasons not to have one.
