Yes, beautiful Web 2.0 (or 3.0!) templates would be nice, but they will still be generic. There are thousands of cheap Web 2.0 templates available on the Web
right now, most of which can be adapted to XSitePro, but almost everyone still wants a custom design for their business, or they want a generic template customized for their business.
If you have a logo, you'll want it incorporated directly into your header. If you have an attractive or recognizable storefront, you might want that incorporated into your header. If you have your own industry photos, you might want those incorporated into your header. Often the people in generic headers don't suit your demographics, so the header will often need to be redone anyway.
You'll likely want text on your header that's crisp and that uses a really nice, special font. With a generic template, unless you know how to add text in an image editor, you'll have to type your title text over top of the header using one of the few Web fonts available. Note: Web fonts look pixelated, especially at large sizes, but text created in a graphics editor like Photoshop is crisp and clean at any size.
